I Confess:
I'm rather late to the menu planning game this week. It's not that I don't want to plan my menu, and I know I need to plan my menu, but the fact of the matter is....
I'm lousy at it. Really, stinking lousy. I see all these incredible recipes and great dinner ideas that I want to try while I am wandering the blogosphere, and I tell myself I am going to start automatically picking days to use them as soon as I see them... and then for some reason I don't. Sigh!
And that's the reason I spent 20 minutes staring at my cabinets/fridge/freezer today trying to figure out what to make for dinner tonight when DH comes home (It's not helping that I need to reorganize my pantry cabinets again since my pasta, crackers - oh especially those Ritz crackers- & rice is overtaking other shelves at the moment)
I could have easily spent those 20 minutes doing something else - it's not like I don't have plenty to do around here (or certainly I could have spent it online catching up on blogs! lol) but instead, there I was.
I've had it. I promise myself I am going to get better at the menu planning, if not just to save my sanity, besides saving money. (At least I can't break down and have renegade trips to the grocery store with the lack of funds at the moment)
Lunch today was chicken sandwiches with a bowl of cream of mushroom soup. DH also had a handful of seasoned steak fries since he said he was starving. I can't exactly send him to work hungry! ;)
Dinner tonight will be herb crusted tilapia, butter noodles, and basil potatoes (basically, potatoes cut into chunks, drizzled with olive oil and basil, cooked in the crock pot on high for 2 or so hours. Super easy!)
