Recipe: Salsa Chicken Quesadillas

Guess what's for dinner tonight? ;)

*1/2 cup salsa
*1 cup shredded cheese
*1/2 lb to 3/4 lb sliced chicken (if using a Quesadilla maker, the thinner the better)
*8 burrito sized tortillas
*1 1/2 tablespoons taco seasoning
*1 tablespoon oil
*2 tablespoons water
*sour cream if desired

Brown chicken in skillet in oil (I use olive, but you can use vegetable) When finished, mix in taco seasoning and water so chicken is seasoned.

Spread tortilla evenly with salsa and cheese, add in seasoned chicken and top with a second tortilla. Heat another large skillet sprayed with cooking spray on medium heat. Add quesadillas and cook for 4 to 5 minutes on each side or until lightly browned on both sides. Repeat with remaining quesadillas. Cut each quesadilla into three wedges to serve, and garnish with sour cream if desired.

Instead of browning in a skillet, you can easily make this in a quesadilla maker if desired, following your manufacturer's directions for use. (Mine takes about 5 minutes or so to make each one)
