Recipe: BBQ Chicken Bake

2/3 cup biscuit mix
2 tablespoons water
1 egg
1 1/2 cups shredded Cheddar cheese (about an 8 oz packet)
2 teaspoons vegetable oil
3 boneless skinless chicken breasts, cut into 1/2-inch pieces
3/4 cup barbecue sauce

Heat oven to 400°F, and spray a 9-inch pie pan or 9-inch square baking dish with cooking spray. In small bowl, stir together biscuit mix, water and egg. Spread in bottom of pan then sprinkle with 1 1/4 cups of the cheese. In a skillet, heat oil over medium-high heat. Cook chicken in oil, stirring occasionally, until lightly done (make the chicken white or lightly browned at the most) Stir in barbecue sauce and heat just until BBQ is hot. Spoon over the batter in pan to within 1/2 inch of edge. Bake about 20 to 25 minutes or until edge is dark golden brown. Sprinkle with remaining 1/4 cup cheese. Place in the oven and bake 1 to 3 minutes longer so the cheese melts.

You can quicken this up by pulling out a can of Pillsbury Grands (or similar brand) biscuits. Roll out the biscuits (or simply place side by side in a baking dish) and add the chicken mixture. It takes about 20 minutes to cook, just the same as the biscuit mix.

It should serve 6. (unless your DH or teenagers eat like my DH, in which case, all bets are off LOL)
