brie
12 oz fresh sliced mushrooms
1 lb boneless skinless chicken breasts
olive oil
Saute the mushrooms in a generous serving of olive oil. Put aside, and preheat the oven at 350 degrees.
Slice the brie into thin quarter inch wide slices.
Next flatten the chicken breasts either using a mallet or a plastic covered rolling pin. If you have very thicken chicken breasts, you may just want to make a slit in the thickest part.
Take the flattened chicken and wrap it around a thin slice of the brie. (If you made slits, stuff the brie in the slit)
Place them in a glass baking dish and drizzle with olive oil.
Cover with the sauteed mushrooms, and bake for 25-30 minutes.
This goes great with asparagus!

It's been so long since I've had brie! Recipe sounds really rich..yum.
This looks delicious, though you must live somewhere other than California, because the price of brie around here is way more than 2 bucks. I wish it were that cheap! Still, I just might have to splurge...
