Recipe: Slow Cooker Orange Roast

This is a simple way to have a really great meal with little work (my favorite!) The reason I am not putting the amount of carrots & potatoes is that you'll want to match the servings to the size of the roast. I would suggest a good roast somewhere between 2 to 4 pounds depending on how many people you will be having for dinner. I believe the one I used in the photos was just over 2 pounds.

pork or beef roast
potatoes
carrots
1/2 - 1 cup vegetable broth (or bullion cube with water)
orange sauce

Cube the potatoes and place them on the bottom of the crock pot, followed by the chunks of carrots. Feel free to substitute a bag of baby carrots instead.


Add the vegetable broth. For a 3 pound roast with 6-8 potatoes and 5-6 carrots I suggest using at least one cup of broth.

Next, rub the roast with a generous serving of the orange sauce (this can be found in the Asian food aisles.) If you'd like, pour some over the veggies before placing the roast down on top. Add more sauce if desired.


Cook on low for 8-10 hours. This one's a definite all day cooker, I don't suggest using it on high. Halfway through you can add more sauce if desired again (do it quickly because remember the heat will escape once you remove the lid) I added a little extra sauce just before serving instead.


I've got to tell you, the aroma from this will make your tummy growl all day long. It's a great one to come home to.

total: $5.99 (or less depending on sales) for 6-8 servings up to $14.75 for a pricier roast
