Recipe: Slow Cooker Sweet BBQ Chicken

This cooks fairly quickly, so I don't suggest this one as an all day slow cooker recipe.

1 lb boneless chicken OR 2 lb bone in chicken
1 can pineapple
1 bottle Honey BBQ sauce
1 cup fresh sauteed mushrooms

Slice the chicken into strips. You don't have to brown them before you place them into the crock pot, but I am rather paranoid like that.


Next, saute the mushrooms in a generous dash of olive oil.


Next, add the chicken and mushrooms to the crock pot. Partially drain the pineapple, and add to the slow cooker.


Follow with the bottle of BBQ sauce. I actually used half a bottle of honey BBQ, and half a bottle of a Spicy BBQ to give it a little more kick. You can water it down with a little bit of chicken broth if you'd like.


Cook on high 3-4 hours. Serve with rice.

Pineapple $0.99
mushrooms $1.00
plus rice $1.00
Total: $5.97 for 4-6 servings

Yummy! I was actually planning on making some bbq chicken wings one night this week. I think I might try adding the pineapples like you suggest. (Not much of a mushroom fan though, so we'll leave those out. :)
