Recipe: Flatbread Pizza

I guess we're on a pizza kick here lately. ;) Honestly, every time we've gone to order pizzas since we've lived out here, we've been disappointed. I can make them much better (and much, much cheaper!) myself. Plus, if I have a midnight craving, I don't have to worry about delivery! ;)

There's no waiting for the crust to rise with this recipe, so you can have it ready to go in the oven in less than five minutes prep time (or about the time some pizza places leave you on hold?)

2 cups all-purpose flour
1 teaspoon salt
2 tablespoons dried oregano
2 eggs
1 1/2 cup milk


Preheat oven to 400 degrees. Spray a rectangle baking sheet or pizza pan with cooking spray. (Use one with edges if you can!)

In a large bowl, stir together flour, salt, and oregano.


Lightly beat the eggs:


The add the eggs and milk to the mixture, stirring well.


Pour the batter out onto the sheet, and use a spatula to flatten it out so it looks like this:


Bake in preheated oven for 10 minutes, until crust is set. (You may end up with a few bubbles, don't panic. No one sees it once the toppings are on.)


Drizzle on pizza sauce, add toppings and sprinkle on cheese. Bake until cheese is melted, about 5-6 minutes.


My cost to make this was no more than $1.50, including toppings. The crust at maximum would be about $0.50 to make. It's also really good with a little olive oil and cheese added to it!

Oh this is a great recipe!! It couldn't have come at a better time for me either. My kids are on a huge pizza kick right now. It is all my two little ones will eat. They have fallen off the growth chart at the pediatrician's office so they are on a "eat whatever they want" diet" and my son is always kind enough to remind me that he doesn't want what I made because the doctor said he can eat whatever he wants! I have ordered take out THREE times this week. I also make my own pizza but I hate waiting for the dough to rise and my kids are impatient too. I will definitely be trying this recipe. Thank you for this!!! I have been CRAVING pizza!!! It gets expensive!!! One question the hubster does not like thin crust can I make this a bit thicker???
