The Mac N Cheese Challenge Round Four

With this rain, we decided to switch the Challenge to lunch because we wanted something warm to take away the dreariness! I semi went over the $1, because we have to have milk with our tomato soup. If you don't normally use milk in yours, no worries!

I did use a can of tuna from Save-A-Lot instead of a Fred Meyer brand - normally I use a coupon and get the pouches for about 50 cents each, but since the challenge doesn't involve coupons, I used Save-A-Lot's. I have seen Fred Meyer have their brand of tuna on sale for 50 cents before, so I'm sort of not cheating. ;)

1 can tomato soup (albertsons or Fred Meyer brand $0.50)
1 can tuna ($0.50 at Save-A-Lot)

Boil the macaroni for two minutes, and drain 95% of the way if using milk, 75% if not. Yes, only two minutes, or you'll end up with totally soggy pasta!


Next add in the can of tuna.


Then add the can of tomato soup. Prepare it however you would normally - with water or milk.


Cook on med-low for 5 minutes until everything is warmed.


Serve with homemade biscuits (about 40-50 cents a batch) or grilled cheese sandwiches (at Fred Meyer, the FMV brand white or wheat bread is 88 cents a loaf, FMV sliced cheese 99 cents for 12 slices. For a family of 4, the grilled cheese is about the same cost as the homemade biscuits)

I'll be honest - this was my least favorite one so far in the challenge, but it was filling. I think I would have liked it a lot better if it was chicken - I'm not a huge fan of tuna. If you're like me, and your budget allows for the can or leftover chicken - splurge!
