Recipe: Mexican Lasagna

This is a real filling meal, that's budget minded depending on your shopping habits. ;) You'll see in my pictures I used nacho cheese because I was finishing off a #10 can of it, but shredded cheese is normally what I make this with. You could also use Velveeta too if you'd rather.

1 can of diced tomatoes, drained, or 1 good size fresh tomato, diced
1 can of refried beans (double this if making vegetarian)
1 lb of ground beef
1 packet of taco seasoning or the equivalent
3-4 burrito size flour or corn tortillas
2-3 cups shredded cheese

First, brown the ground beef, and add the taco seasoning in after draining well. (It looks like there is more than 1 pound in my picture because there is - I mixed in some vegetarian faux meat with it so I had some cooked for another dish)


After spraying the dish well (I used 9x9 glass dish), place a tortilla on the bottom, and spread with refried beans.


Follow with a layer of cheese.


Top with another tortilla. To keep it neat, trim the edges of the tortilla to fit into the dish. Next, add another layer of beans to keep this vegetarian, or add the ground beef*
*to cut costs, use 1/2 pound ground beef, and 1 cup of rice, mixed together before placing it in dish.


Cover with tomatoes (ignore mine, I was out of diced tomatoes so I compensated with crushed, lol) and more cheese.


Add the last tortilla.


Bake at 350 degrees for 15 minutes.


Serve with salsa and sour cream if desired.

I didn't remember it was such a fast dish, good reminder. Love it, but it's been awhile since I've made it. You know you get in a rut and get making the same thing over and over, like on auto drive.

Have you used black beans instead of refried?

Question for you, I see you have 2 types of subscriptions to your page. I'm trying to understand the difference between subbing by email and reader...can you help explain.

I've been reading so much on the net trying to learn a few new tech things, my head hurts.
