Recipe: Slow Cooker Simple Beef Stew

This is a very simple, basic recipe for your slow cooker - which also makes it very cheap! Remember, when you are using meat in your slow cooker, any cut will do. Don't spend the money on pre-cut beef cubes unless it's already on sale for a good price. A quick and easy way to cut the beef into cubes is to use scissors!

1 - 2 lbs beef, cubed
3-4 large baking potatoes
5-6 carrots
1 cup beef broth (or bullion cubes & hot water)
1 can peas or 1 cup frozen peas
1 tablespoon oregano or Italian seasoning

First, cube the potatoes into bite size chunks, and place those at the bottom of the slow cooker. Slice the carrots and place them on top - these two are the items that take the longest to cook, so you want them on the bottom. Pour the beef broth (or cubes and hot water mixture) over the carrots.


Follow with the cubes of beef, and sprinkle evenly with the seasoning.


Cook on high 6 hours, or low 8 to 10 hours. In the last hour, add the peas and mix everything together. Don't add the peas any earlier, or they will turn to complete mush!


Serve in bread bowls for a fun touch. My total cost to make this was under $4 - plus the bread bowls.

Beef - marked down to $1.79 a lb/package just over that
potatoes - $0.35
carrots - $0.40
beef broth - $0.50
seasoning - $0.05
peas - $0.40
Total = $3.69

Looks tasty! I make beef stew once a week probably. I use beef, carrots onions and white potatoes. Its inexpensive and always have leftovers. Great post.
