Recipe: Slow Cooker Fiesta Chicken

This one is super easy!


1 lb boneless skinless chicken
1 cup salsa
1 can corn (not creamed!)
1 can black beans
shredded cheese
sour cream if desired


Lightly brown your chicken - this takes maybe 2-3 minutes each side, less if you are using thighs or tenders.



Next, you'll want to mix the beans, corn, and salsa together. This is easily doubled or tripled if making more meat! (Note: I was out of black beans, so I'm using chili beans this time)



Place the meat on the bottom of the slow cooker, and cover well with the salsa mixture. Cook on high 4-6 hours, or low 8-10 hours.


When it's done, you'll want to mix everything together. The chicken should easily shred at this point. Sprinkle with shredded cheese, and allow the cheese to melt for a few minutes. Serve with tortillas on the side, and garnish with sour cream if desired. It makes about 4 to 6 servings.

I make something almost exactly like this, but I mix everything in with cooked pasta. We call it Southwest Chicken Pasta, and it is AMAZING!!!
