Recipe: Slow Cooker Mexican Turkey

Here is recipe #4 for your turkey leftovers! I skipped a ton of photos for this one since it's fairly simple.

1 pound shredded turkey
1 can corn
1 can diced tomatoes
1 box Mexican style Rice Mix (if you make your own - just use the equivalent)
1/4 cup broth


Add your shredded turkey, broth, corn, and diced tomatoes into your slow cooker. Since your turkey is already cooked through, use your crock pot on LOW. I placed it on 10 hours, but only ran it for 2 hours.

At about the 1.5 hour mark, cook the rice mix as directed on the box. (Honestly, I just toss mine into our rice cooker) When it's done, add it to the slow cooker, and mix well.



Serve with tortillas and garnishes such as sour cream or shredded cheese.

After this recipe, I'm done with what was left of our turkey. (I used some for doggy chow) But because I'm nuts - I'll be making another turkey this week, and I'll post some more recipes when I've got leftovers!
