Recipe: Brie Appetizer Cups

I recently had the chance to participate in Ile de France's Holiday Bash For Cash recipe contest. I was one of 50 bloggers that was sent some cheese to make an appetizer to enter into the contest! In a few days, they will be opening up voting on their blog, so if you like my recipe and would love to vote for me, that will rock! (I'll let you know when it's up) Anyways, here is my super easy and yummy recipe I submitted:

Azumaya won ton wrappers - square type
12 oz cooked, cubed chicken
1/3 cup sun dried tomatoes
1/3 cup spinach
1 wheel Ile de France Brie cheese

plus regular size muffin pan(s) and Pam style spray.

Push wrappers in greased muffin pan.

Add sundried tomatoes and spinach in an alternating pattern (one sundried, one spinach), or if using two muffin pans, do one spinach, one sundried.

Follow with 2-3 small pieces of cubed chicken.

Remove wax from brie and cut into 8 triangles. Slice each triangle into thirds, and place that third onto each appetizer.

Bake at 400 degrees for 10-12 minutes. This makes 24 appetizers!

Karen: I found them in the fresh produce section, near the bagged salads and mushrooms.
