Blog Tour: Splenda

Mom Central recently asked if I wanted to be a part of the Splenda blog tour. As y'all know, I'm dealing with DH's blood sugar issues, so I happily screamed Me! Me! Me! and Mom Central obliged. They sent me over a nifty Splenda Tastebook and a package of Granulated Splenda No Calorie Sweetener to try out some recipes together with.


Granulated Splenda No Calorie Sweetener, or sucralose, mostly measures cup for cup like regular sugar, so it's not that difficult to do the old switcheroo. Some breads or baked goods with yeast may not rise as high, and it will also not help activate yeast, but that's one of the few differences. It also tastes pretty darn much like sugar in baked goodies, so it's also easy to sneak into husband's sweets. The best part? Apparently a cup of Splenda has 678 fewer calories than a cup of sugar - it has less than 5 calories per serving.

Now depending on which Splenda product you are using (they have several different ones!), you may have other differences, so be sure to check out the back of the packaging before you start your recipe. One of the differences is that most baked goods won't brown. (To get around this, baste a little butter or spray some cooking spray on the goodies before putting them in the oven. If you're not 100% worried about calories, I recommend the butter, since cooking spray is just chemicals.)

I used a little in one of my pizza crust recipes - I had been halving the sugar to try to keep it down, and it came out fine. I also used it in a rolls recipe I will be posting later today, and I admit I was a little worried on this one. It uses much more sugar than I like to use in my baking, but the rolls always turn out so yummy that I consider it worth it. But the Splenda delivered in it - I couldn't tell much of a difference.

Since it's Spring, and I'm enjoying the fruit more readily available in store, slowly but surely, I wanted to share this recipe:

Watermelon Lemonade

Ingredients:
7 cups cut-up watermelon cubes, seeded
1 cup fresh lemon juice
1 cup SPLENDA® No Calorie Sweetener, Granulated

Directions:
Process watermelon cubes in a food processor, in batches if necessary, until smooth. Press mixture through a sieve into a pitcher; discard solids. (You should have about 3 cups watermelon juice.) Add the lemon juice and SPLENDA® Granulated Sweetener or SPLENDA® Packets, stirring until SPLENDA® dissolves. Serve over ice.

Note:
Servings: Five 6oz drink. To keep this summer refresher simple, look for cut up watermelon in your supermarkets refrigerated produce section.
