I usually make it with diced tomatoes and fresh sauteed mushrooms, but I had an expensive pasta sauce that was at it's use it or loose it date, so the photos show that instead. It's better with the fresh stuff, but obviously you can skip a few steps and head for the jarred sauce for time constraints.
Yes, I know the calories are killer - but trust me, an extra walk or date with the Wii Fit is SO worth it! :)
zucchini, thinly sliced
mushrooms, 8 oz
1 can diced tomatoes (preferably with the basil already added, or just add some basil. if tomatoes are in season, feel free to dice your own!!)
1 pound ground chicken
1 pound fancy pasta of choice
3 tablespoons butter
1 cup shredded Romano cheese
Saute the fresh zucchini and mushrooms in a good drizzle of olive oil, and when the mushrooms are looking half way done, add in the tomatoes.
Brown the ground chicken well, and drain all the fat.
Cook the pasta, then drain. Add the butter, and let it melt, coating the pasta. Follow with the Romano cheese, and mix well.
Serve, adding the zucchini, mushrooms and tomatoes on top of the pasta.
By the way, it seems expensive, but with everything bought on sale, it shouldn't cost more than $10 for 4 servings - mine usually costs about $5.
