Menu Planning Monday - The Slightly Different Way To Plan This Week Edition


Alright, I am doing something completely different for my menu planning this week - I'm not menu planning. No, I haven't lost my mind (weelll...) but I really didn't stick to last week's plan - in fact we had quesadillas twice last week for dinner - so this week, I'm basically closing my eyes, opening a cookbook, and taking some inspiration from whatever I land on each morning. We need some serious new recipe blood around here! I'm going shopping to stock up on a few more veggies, but for the most part, I think we are set on most recipes. I just did a huge stock up on chicken yesterday because I found it (boneless skinless) for $1.59 a pound - frozen, which I don't usually do because I like to prepare and portion my meats for meals before I freeze it - but at that price, I wasn't going to walk away.

I'll try to blog all the recipes unless they are a complete bomb. Tonight's has already been picked out, so check back tomorrow for the recipe and pictures (well, if my camera lets me - the flash is pretty icky these days ever since the smoke incident)

Saturday update: I'm actually having a blast messing around with creating new recipes at the last minute. OK, so I cheated having DH grill out steak one night, but hey, he was home and it was gorgeous outside! I'll definitely be doing more weeks like this - but remember, the reason I can do it is because I have a well stocked pantry. If you don't, you'll end up spending more money trying to create meals at the last minute.

Monday: South of the Border Bake

Tuesday: Turkey Veggie Wraps, pasta salad

Wednesday: Cheesy Chicken Sandwiches, chips

Thursday: DH grilled steaks! (mmm!)

Friday: Honey Chicken & Pineapple

Saturday: Spicy Mediterranean Wraps

Sunday: Grilled BBQ Spice Rubbed Chicken, salad

I think that it is great that you are taking a week to try to inject your menus with new recipes!!

I like throwing caution to the wind and not planning! I know, it is probably costing us, but I never know what the day brings and who is gonna be home and when.
