Recipe: Fiesta Summer Dip

Sooo... I'm a little late for Cinco de Mayo to post this. lol This is a super easy, summer friendly chip dip that's low in calories - well, depending on how much cheese you use. ;)

1 can corn, drained (or the equivalent frozen or fresh cooked)
1 cup salsa
1/2 cup shredded cheese
2 tablespoons chopped green onions (for garnish)

Preheat oven to 350. After draining the corn, mix with the salsa.


Top with shredded cheese and garnish. (Garnish missing because I was cheap this last time. LOL)



Bake at 350 for about 5 minutes, and serve with tortilla chips of choice. You could microwave it too - I'm imagining about 3-4 minutes should do the trick.

YUM!! I have just been instructed by "THE BOSS" to get a copy of this. I'll just use the salsa I make (which has green onions in it), so all I need to get is the corn and cheese. Great recipe!!!
