Recipe: Turkey Veggie Wrap

Ah, with summer almost upon us, it's time to look for recipes that can be easily made in warmer weather. This wrap is easy to make! Now I'm using a basic flour tortilla in my pictures, but feel free to use some of the fun ones like spinach or sun dried tomato (Mission makes a great sun dried tomato tortilla for wraps!)


1 cucumber
1/4 cup sour cream
1 teaspoon finely chopped roasted garlic
2 burrito size tortillas (or soft taco, depending on how hungry you are)
1 cup fresh spinach leaves, washed, stems removed
deli turkey breast
cheese - use the vegetable peeler to make fun curly slices
1/4 cup carrot
1/4 cup chopped red bell pepper



Using a vegetable peeler, peel thin lengthwise ribbon-like slices from cucumber, and carrot. If you have shredded carrots, feel free to use that instead - I just find it easier since I am already slicing the cukes. ;) Go ahead and slice the cheese as well - you can use Swiss cheese, Havarti, or cheddar - whatever you already have on hand. I was using a sharp cheddar.


Combine the sour cream, garlic, and red peppers in small bowl. You'll want to spread the inside of the tortilla with the sour cream mixture.



Next, place the slices of turkey breast on the tortilla, followed by the spinach leaves, carrots, and cucumber. By the way, if you are ordering meat from the deli counter, ask for it to be a little thicker if you can - if fits into the wrap better than spreading thinner slices. And don't overdo it on the veggies, or you won't be able to roll it very well.




Roll up, and cut each wrap in half. Secure with toothpicks.
