Recipe: Taco Turkey Roll Ups

DH's schedule has been so off, that I'm trying to come up with things that can be quickly fixed. This one is definitely quick to prepare, and super yummy!

1/2 brick of cream cheese, softened
1 tablespoon taco seasoning
1/2 lb medium sliced turkey lunchmeat
lettuce
tomatoes, diced
1/4 cup olives
shredded cheddar cheese
burrito sized wraps or tortillas


Mix the softened cream cheese and the taco seasoning in a small bowl:


Next, you'll want to spread this out on the tortilla. Top with the olives (it sticks better to the cream cheese rather than fall out when eating this way!) and shredded cheese:


Follow with the turkey, lettuce and tomatoes (sorry, I don't know why I didn't take a picture of this step). Don't overfill it with the veggies, because you'll want to roll it carefully, and then cut it in half:


How frugal it is depends on which lunch meats you use, I guess - but it certainly is a lot cheaper than a trip to the sandwich shop. ;) I seriously love cream cheese - you can mix it with so many different herbs and spices to create fun spreads for wraps!
