Recipe: Toasted Oatmeal Chocolate Chip Cookies

In honor of today being National Cookie Day, here's a yummy cookie recipe for you to bake this season! Sorry for not doing step by step pictures like I usually do, but we were baking a lot of different cookies! :)

2 1/2 cups quick cook/old fashioned oats
1 cup chopped walnuts
1 cup chocolate chips
1 1/2 cups packed brown sugar
1 cup butter, softened
1 teaspoon vanilla
1 egg
1 cup flour
1 teaspoon baking soda
1/4 teaspoon salt

Heat oven to 350 degrees. Spread the oats and the walnuts in a shallow metal baking pan, and "toast" - bake them for 15 to 20 minutes, stirring about every 5 minutes or so. If your pan is large enough that everything is spread out well, you don't really need to stir the oats. (But check on them to make sure they aren't burning!) You want them to look lightly browned, set them aside to cool while you head on to the next step.

Beat the brown sugar, vanilla, softened butter, and egg in a large mixing bowl. You can use an electric mixer to do so, but I prefer using a spoon and doing it by hand. You know me. ;)

Next, stir in the oats and walnuts, chocolate chips, flour, and the salt and baking soda. Once this is all mixed, you'll want to drop the dough in rounded tablespoons onto your ungreased cookie sheet. Bake about 8 to 10 minutes, when you see that they look golden brown, they're done! Wait about 2 minutes, then go ahead and move them onto cooling racks. It should make about 2-3 dozen cookies, depending on how rounded your make those tablespoons. ;)

Those look like some cookies that would be good right out the the oven, am I right? Yum Yum!

I like to Microwave my cookies for that out of the oven taste.. mmmm.. and with some tea.. I know I should say milk, but I like cookies better with tea. mmm.. now i want some cookies with tea.
