Menu Planning Monday - Here Comes February!
Geez, is it really Monday again? Are you sure? Maybe I just sleepwalked through most of last week?
So Saturday we had gone shopping. (Remember my rant on smaller sizes?) Let me explain my goal: I wanted to take $150, and turn it into mostly shelf stable foods so I could slow down on grocery shopping for a few months. (The price of gas is seriously starting to eat at my DH's paycheck) Now I have certain price points (sometimes using coupons) that I will purchase things at - for instance, I will only purchase pasta when it's 50 cents a bag/box, and cereals when they are around $1 a box. Normally it hits those every so often, and I take advantage and stock up. I couldn't find anything that was in my usual price points. Yikes! If this keeps up, my frugal recipes aren't going to seem so frugal anymore! lol
My Costco membership is expired and I didn't get enough use out of it the last year to justify renewing, so I am going to hit up the restaurant supply store later this week to see if the prices are any better if I purchase the items we use the most in bulk. Even though we are only three (well, 5, depending on the meal, since we feed the dogs homemade food, I'll set aside meats and veggies before adding spices), I've learned how to use larger size cans and packages by planning my meals around opening them - it's really not that hard to come up with three different variations using green beans, for instance.
Monday: Beef & Broccoli, rice
Tuesday: Spicy Mediterranean Wraps
Wednesday: Chicken a la King
Thursday: Spicy Beef Roll Ups
Friday: BBQ Chicken Cornbread Pizza
Saturday: Spinach Stuffed Chicken
Sunday: recipe of the week
