Recipe: Sausage Pasta Skillet Dinner

Well, although this recipe uses ground pork - feel free to substitue ground chicken, turkey, or even beef if you want to. I'm a firm believer in modifying recipes based on what's on sale! ;) Also, I used Garlic Gold again in this recipe, but please don't think you have to. I was just trying out different recipes using it for my review. (Which I know... I kept forgetting to post these recipes.) You can easily just sautee some fresh garlic in olive oil and then add the meat & veggies in.

You'll need:
1 pound ground pork sausage
olive oil & garlic
1 medium zucchini, thinly sliced
1 can diced tomatoes, drained
1 cup fresh spinach
basil
1 pound short pasta (again, whatever version your family enjoys)


Begin browing the ground meat in 2 tablespoons of olive oil. Begin cooking the pasta as directed on the package. While this is cooking, slice the zucchini thinly (not paper thin, but the thinner it is, the faster it cooks as you know!)


When the meat is looking almost browned, add in the spinach:


Then add in the zucchini, followed by the tomatoes, and a pinch or two of basil. You can add in more olive oil and garlic if you'd like:



When the veggies look cooked (about 3-4 minutes), toss with the pasta:


Add some parmesan cheese and serve. I love having a million and one different pasta recipes, because it keeps it from being boring, while stilll keeping meals more on the frugal side - especially when veggies are on sale/in season!
