Recipe: Slow Cooker Pizza Soup

Awhile back, I had picked up some of the Johnsonville Jalapeno and Cheese Smoked Sausage marked down to 99 cents. It was a good price! But it was a little spicy on simply a hot dog bun, so I stuck the rest in the freezer, and well, kind of forgot about it. lol Now I am trying to clean out the freezer again, and this is what I came up with. DH loved it, so I thought I'd blog the recipe just in case anyone is in search of a frugal lunch idea - you could use any hot dog or smoked sausage with it, I am sure!

4-5 smoked sausage/hot dogs
1 can corn, drained (or the equivilant fresh!)
1 can black beans, drained (or dried beans soaked overnight and ready to cook)
1 can Italian stewed diced tomatoes (or the equivilant chopped fresh with some Italian seasoning)
1 finely chopped green (or red) pepper
1/4 cup BBQ sauce
1/2 cup water
shredded cheese, for garnish

Slice sausage into thin slices about the size of a quarter. (You can do it bigger if you want.) Add into the slow cooker with the BBQ sauce and water. Drain the corn and black beans, and add in. Next, add in the tomatoes, but don't drain this can as you'll want the added moisture! Follow with the green peppers, and cook on low for 6-8 hours:


Mix well. Serve with a bit of shredded mozzarella cheese:


Feel free to add any extra veggies you have lying around in too! A variation instead of the hot dogs is to use slices of pepperoni. (Oh, and if you're wondering why I called it pizza soup - it smells like a supreme pizza when it's cooking!)

Have made this several times, and my fam loves it! Bigger portions and changed up the sausage for a different flavor. It's a win- win!!!
