
Tropical Traditions Organic Coconut Flour is gluten free, so those with gluten allergies can use it! It also has not been treated with sulfites. You can use it in standard recipes by substituting 10-30% of the grain-based flour with the Coconut Flour, or you can create muffins and quick breads using just the Coconut Flour.
Let me warn you, until you're used to using the Coconut Flour, don't go trying to create your own recipe. I found out the hard way myself when my first batch of muffins came out completely inedible! (Seriously, it was the first time I've ever seen my DH take one bite and refuse to finish eating something. LOL) After that, I stuck to trying out some of the great recipes that Tropical Traditions has on their website. I tried the Gluten Free Banana-Blackberry Muffins since we had fresh blackberries from our yard.
This one came out MUCH better - just be warned they aren't very sweet like some muffins are. Oh, I added more blackberries than the recipe calls for, because I couldn't help myself. lol I also used the Coconut Flour to dust my chicken in my Orange Chicken and rice dish I make. (Simply toss the chicken in the coconut flour, and then "fry" it in a tablespoon of coconut oil, or canola oil) It was perfect like this!
A 2.2 pound bag of Tropical Traditions Organic Coconut Flour retails for $15.00 - although it's on sale at the moment for $11.99! I've been so used to purchasing in bulk, that the 2.2 pound bag seemed small when I first glanced at it - but unless you are baking day after day using it, it does last longer than you'd think! One warning for those watching calories: it does have about 4x the calories of regular white flour, so be sure to adjust what you are eating accordingly.
All in all, I was happy with the Tropical Traditions Organic Coconut Flour, and I'll definitely continue to keep it in my pantry!

I would definitely make the chocolate cake. We do a lot of gluten free flours and substitutions can be difficult. It needs to be done by weight rather than measurement. I don't know if that works with coconut flour but I could definitely do some research.

The Gluten Free Banana Avocado Quick Bread sounds great. I love Avocado and Banana Bread but I haven't been eating grains recently, so some coconut flour would be great for satisfying my cravings for baked goodness!
