Recipe: Slow Cooker Taco Chili

Looking for a heartier meal that's easy on the wallet? Try this - it's super easy and you can use your slow cooker.


1 green pepper, diced
2 cups red or kidney dried beans, soaked & cooked (or 2-3 cans)
1 cup rice, cooked
1 pound ground turkey, browned
1 packet taco seasoning
2 cans diced tomato (or 3-4 tomatoes, diced) don't drain!
2 cups water
1 tablespoon cumin

First, brown the sausage, then add to the slow cooker. (You can use ground chicken or sausage/pork) Follow with the cumin and taco seasoning.

Next, add the beans, (If using dried, be sure to cook them first!) followed by the tomatoes and the water.

Cook on low for 6 to 8 hours. Just before serving, add in the rice and green peppers, and stir well so that the ingredients are evenly distributed. (I used two peppers, that's why there looks to be a lot in the photo!) You can also add in a can of corn, or add more rice, to stretch the dish out even further.

Serve with tortilla chips and top with shredded cheese, if desired.
